This recipe is based on a dish my mom makes from time to time. I have many great memories associated with this meal.  We enjoy it every summer up at the cottage.

I am the kind of person who has to know what we’ll be eating for dinner and it’s what I look forward to most all day!  Especially when I’m pregnant the formula is: delicious food equals JOY.  This is the number one dinner I crave when I’m pregnant and for good reason; it’s so satisfying!

My mom’s recipe never disappoints but she’s the kind of cook who improvises by adding a little of this and a dash of that. So my mission with this recipe was to capture the essence of my mom’s original recipe with careful instructions.

Oh, The Joys of Deglazing a Pan with White Wine.

My favourite part of making this recipe is deglazing the pan with white wine.  Is there anything dreamier? I am totally romanced by moments like that.

When you make this recipe,  pause and take a moment to enjoy the smell of wine simmering and melding with onion, mushroom and peppers. When I was a teenager and noticed my mom was about to deglaze a pan with wine, I would scoot into the kitchen and take over stirring the pan just to enjoy the moment.  It’s seriously one of my favourite life experiences.

Hospitality Tip of The Day:

 Before we get into the recipe, here’s a hospitality tip for you to ponder: 

Has it been a while since you’ve had someone over to your house for dinner? Make a short list of friends, family, neighbours or strangers that you would like to invite over to your home in the next 3-6 months. Then choose someone to invite and make it a goal to set a date as soon as possible.

Prioritizing hospitality in your home does take some planning and forethought especially for those people that you haven’t seen in a while or those you’ve never had to your home before. Sometimes we just need to take the first step. I encourage you to extend an invitation to someone today.   Maybe you can serve them this dish!   Okay, on to the recipe!

How to Make Creamy Mushroom Penne With Sausage and Red Peppers

In a large frying pan, cook the sausages thoroughly and set aside on a plate to rest.

Meanwhile, prepare and chop the onion, peppers and mushrooms.

Put water on to boil in a large pot for pasta. Heavily salt the water.  Once the water is boiling, add the pasta and boil according to the directions on the package. Drain and set aside.

While your pasta water is coming to a boil, heat butter and olive oil in the same pan in which you cooked the sausages.  Cook the onion until translucent.

Add the wine to the cooked onions.  Stir for 1 to 2 minutes to reduce the alcohol and deglaze the pan.   (Take time to pause and enjoy the smell of wine as it cooks in the pan. One of the best experiences in the world!) 

Add the thinly sliced peppers and diced mushrooms and cook for a few minutes to soften them. Add the mustard, rosemary, thyme, cream, and maple syrup.  Season with salt and pepper to taste.   Simmer until the sauce is reduced and coats the back of a spoon. Taste the sauce at this stage and adjust the seasoning if necessary.

Slice the sausage into thin coins and add to the sauce. Add the pasta as well and toss to coat in the cream sauce.  Sprinkle with fresh thyme and serve hot.

Recipe Notes

  • This is a great recipe for date night or a special occasion.
  • I recommend checking the ingredients when you buy the cream. It should only say simple things like cream and milk. Some cream companies add stabilizers and other unnecessary ingredients.
  • Adding olive oil and butter together to the pan helps prevent the butter from smoking if the temperature gets too high.
  • I recommend you try out spelt penne for a healthier pasta option!

Ingredients
  

  • 4 (500g) sausages mild Italian sausage
  • 250g penne pasta uncooked
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 red bell peppers thinly sliced
  • 250 grams cremini mushroom diced
  • ½ cup white wine
  • 2 tablespoon grainy dijon mustard
  • 2 teaspoon maple syrup
  • 1 ½ cup heavy cream
  • salt and pepper to taste
  • 1 tablespoon fresh rosemary (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)

    This looks awesome! I love the idea of sausage and mushrooms. I typically would do mushrooms with some steak and honestly have never thought of combining it with sausage.

    My husband and I are both HUGE fans of sausage and penne dishes and we have done so many variations with those ingredients - but now I know we'll HAVE to try this one because it sounds amazing.     The only thing better than this pasta dish is the left overs the next day. Sooo delicious. I did 1/4 of the mushrooms called for but did everything else as is. An instant classic!
