15+ Cookies Sweetened with Coconut Sugar

Here is a list of delicious cookies that use coconut sugar as the only sweetener!  In addition to being naturally sweetened, many of these healthy recipes are also gluten free and/or vegan. Some call for alternative flours such as almond flour, chickpea flour or spelt flour or unique ingredients like aquafaba. 

These recipes are perfect for anyone looking to enjoy some cookies without any refined sugars!

Benefits of Coconut Sugar: 

Coconut sugar is a healthier alternative to refined sugar. Coconut sugar retains many of the nutrients that are present in the original coconut palm. It has a lower glycemic index than sugar cane, and it's rich in minerals like iron, zinc, potassium and magnesium. 

Coconut sugar contains inulin which is a soluble fiber that is considered a prebiotic because good bacteria in the gut can feed on it. The other benefit of inulin is that soluble fiber helps to slow glucose absorption which may be the main reason that coconut sugar has a lower glycemic index than refined white sugar. 

What Does Coconut Sugar Taste Like? 

First of all, coconut sugar doesn’t taste like coconut at all. Coconut sugar has a rich caramel flavor that's very similar to brown sugar making it an excellent choice for those who want to eat healthier without sacrificing taste! Coconut sugar's deep molasses flavor compliments cakes, cookies and other baked goods well. We are huge fans of coconut sugar in my house. My husband and kids sprinkle it on their peanut butter toast in place of honey. I love to use coconut sugar in baking as its versatility works well in almost any recipe that calls for sugar.

How Is Coconut Sugar Made? 

Coconut sugar is a natural sweetener produced by the sap of cut flower buds on the coconut palm. The flowers are tapped and the sweet sap collected and dried. It's one of the most popular natural sweeteners in the world.

Retraining Your Taste Buds: 

Now that you’re aware of the delicious taste and health benefits of coconut sugar, I also want to mention that coconut sugar is still something to be eaten in moderation. Although it’s a healthier alternative to refined sugar, it is still sugar. 

When I am creating a new recipe, I have two primary goals. The first is to sweeten the recipe naturally to replace the empty calories of refined sugar with a nutritious and delicious alternative. I also adjust the level of sweetness in my baked goods in order to retrain our taste buds to enjoy treats that aren’t overly sweet. 

As you bake with coconut sugar, I encourage you to become mindful of how much sugar you put into recipes. Ask yourself, “Would I enjoy this just as much if it was a little less sweet?” 

To keep blood sugar levels more balanced, enjoy your treats along with protein, fiber or healthy fats on the side. (For example, have a cookie with a few slices of cheese on the side.)
