There are two types of buckwheat flour: light buckwheat flour (hulled buckwheat flour) or dark buckwheat flour (unhulled buckwheat flour). I try to specify for each recipe which flour is required.

What are the health benefits of buckwheat flour?
Buckwheat flour is very nutritious! Buckwheat is higher in protein and fibre than all-purpose flour or even oat flour. 1 cup of buckwheat flour contains 15 grams of protein and 12 grams of fibre according to (NutritionalValue). It is a complete protein that contains all eight essential amino acids. It contains good amounts of potassium, magnesium and B vitamins. It’s naturally gluten-free and typically easier for most individuals to digest. 1 cup of buckwheat flour provides 75% of your daily recommended intake of magnesium, 69% of your recommended copper intake and 34% of your daily recommended intake of zinc. Amazing!
Is buckwheat flour gluten free?
Yes, buckwheat flour is gluten-free. Surprisingly, buckwheat is closely related to the rhubarb plant. Buckwheat is not a grain at all!
Where can I buy buckwheat flour?
Buckwheat flour can be purchased at most major grocery stores (typically found in the health or gluten-free section) I purchased “Bob’s Red Mill” Buckwheat flour at my local grocery store. If you can’t find it locally you could order it online from the Bob’s Red Mill website or find it at a specialty health food store.
Buckwheat Flour and the Glycemic Index
Buckwheat flour doesn’t affect blood sugar levels as much as all-purpose flour. Buckwheat scores low to medium on the glycemic index scale. Buckwheat scores at 71 whereas all-purpose flour scores at 85. Source: UpgradeMyFood.com

How should I store buckwheat flour?
You can store buckwheat flour in a dark cupboard for several months. If you use it only occasionally, consider storing it in the fridge or freezer to prolong its shelf life.
