Lemon Chicken Orzo Soup

Life Around The Table

This lemon chicken orzo soup will become your new go-to soup. The fresh, creamy, lemony broth is the perfect soup for chilly evenings, and the orzo rice-shaped pasta fills you up just like hearty comfort food should!

Simple Ingredients

– butter – carrots – celery – onion & garlic – salt & pepper – chicken stock – oregano & celery seed – chicken breasts – dried orzo pasta – lemon zest and  lemon juice – fresh dill – whole milk and cream

1. In a large pot, cook carrot, celery and onion over medium heat until the vegetables are tender. Add the minced garlic and cook for an additional few minutes. 2. Season with salt and pepper. Add chicken broth, oregano and celery seed, and chicken breasts.

3. Raise the heat slightly to allow soup to simmer, covered, for 20 minutes. Remove the chicken when fully cooked and shred and set aside. Add the orzo and cook for 8-10 minutes.

4. To finish the soup, add the shredded chicken back to the soup and add the zest of one lemon and lemon juice, whole milk, cream, and fresh dill and enjoy!
