Chocolate Peanut Butter Rice Cake Bars

Rice Cakes bars are only as good as what you top them with. So let’s shoot straight for the stars and cover them in chocolate and peanut butter! This makes sense to you, right!? Chocolate brings out the best in almost everything!!

Simple Ingredients

– chocolate chips – coconut oil – peanut butter – rice cakes unflavored – pinch of salt Suggested Toppings – pumpkin seeds – shredded coconut – dried cranberries – sunflower seeds

1. Melt chocolate and coconut oil on the stove top using a double boiler or bowl placed over a pot. 

2. In a large mixing bowl, break up rice cakes into smaller pieces. Add the peanut butter, melted chocolate and a pinch of salt. Stir to mix well, coating all the rice cake pieces.

3. Transfer this mixture to a lightly greased 8x8 pan. Spread it out evenly and top with the toppings of your choice.  4. Put the pan in the fridge to cool and fully set.
