Simple Olive Oil  Carrot Cake

This Simple Olive Oil Carrot Cake Loaf is swiftly becoming a family favourite! It’s perfectly spiced and the olive oil makes it so tender and moist. The cream cheese frosting is lightly sweetened and compliments the loaf perfectly but it is optional!

Simple Ingredients

– olive oil – brown sugar – eggs – crushed pineapple – finely shredded carrot – lemon zest – all-purpose flour – cinnamon – nutmeg – ginger – baking soda – baking powder – sea salt

1. Combine all dry ingredients in a large bowl and whisk thoroughly. 2. Whisk together wet ingredients in a separate bowl.

3. Add the wet ingredients to the dry ingredients and mix until just combined. 4. Transfer to a loaf pan and bake in a 350-degree oven for 50-60 minutes.

5. Allow the loaf to fully cool. Add cream cheese icing and enjoy!
