Date Sweetened Cookies

Date-sweetened cookies are refined sugar-free, soft and chewy and deserving of a place on your go-to cookie recipe list! They will have you asking, “how are these only sweetened with fruit?”

Simple Ingredients

– melted butter – medjool dates – egg – pure vanilla extract – all-purpose flour – baking soda – sea salt – ground cinnamon – rolled oats – chocolate chips

1. Whisk together the dry ingredients including the rolled oats.

2. In a food processor or a blender blitz together the butter, egg, vanilla and dates until smooth and creamy.

3. Slowly add the dry ingredients to the wet ingredients until incorporated. Add chocolate chips and stir until just combined.

4. Roll about 2 tablespoon of dough for each cookie. Press the cookie dough down and shape into desired round cookie shape. Bake at 350 degrees for approximately 8 mins. Enjoy!
