My recipe for Date Cookies creates a delicious and nutritious cookie filled with oats, nuts and dried fruit. These cookies are similar to an oatmeal raisin cookie but use dates instead.

Simple Ingredients

– butter – coconut sugar or  brown sugar – molasses – eggs – vanilla extract – all-purpose flour – baking soda – salt – ground cinnamon – rolled oats – dates – pecans

– Cream together the butter and sugar. – Add the eggs one at a time, beating after each addition. – Add the molasses and vanilla, combining well.

– In a separate bowl, whisk together the dry ingredients. – Slowly add the dry ingredients to the wet ingredients until incorporated. – Add the dates and pecans and beat just until combined.

– If your dough seems soft, chill for 30 minutes. – Roll about 3 tbsp of dough for each cookie. – Add a few snips of dates to the top of each cookie for appearance if desired. – Bake for 12 to 15 minutes in a 350 degree oven. Enjoy!
