Spinach & Sundried Tomato Quiche

Spinach & Sundried Tomato Quiche is a delicious combination of sweet and tart sun-dried tomatoes and the fresh flavours of basil pesto and spinach. 

Simple Ingredients

– butter – onion  – spinach – eggs  – whole milk – heavy cream  – all-purpose flour – mozzarella cheese – sea salt & pepper – basil pesto – sun-dried tomatoes 

Step 1: Make your favourite pie crust recipe or purchase a pie crust to make this a super easy recipe! 

Step 2: Cook onions and spinach.  Step 3: Add the rest of the remaining ingredients (except the tomato for the top) to a large measuring cup or bowl and whisk together. 

Step 4: Add the spinach and onions and stir and pour into pie crust.  Step 5: Slice 1 tomato and arrange the slices over the top.  Bake at 375 F for 50-60 minutes or until the quiche is set in the middle.
