Tahini Stuffed Chocolate Covered Dates

Tahini Stuffed Dates are going to be your new favourite treat!  When you bite into one you’ll think you’re eating a chocolate bar. They really remind me of a Snickers bar. So good!

Ingredients

  • 1 lb Medjool dates
  • ½ cup tahini (sesame seed butter) well stirred
  • 1 ⅓ cup semi sweet chocolate chips
  • ½ tsp coconut oil

  • sprinkle of sesame seeds
  • sprinkle of shredded coconut

Instructions

  • Begin by removing the dates seeds by cutting a slit along one side of the date. Place the pitted dates on a large plate or baking sheet.
  • Fill the center of the date with about ½ to 1 teaspoon of tahini, however much will fit! Place these tahini filled dates in the freezer.
  • Meanwhile, melt the chocolate chips with coconut oil on the stove in a double boiler over medium-low heat. Use oven mitts if the side of the bowl is warm to the touch. (Instructions for a double boiler: Fill a saucepan with several inches of water and place a heat safe mixing bowl over the saucepan in order to melt your chocolate.)
  • Stir until the chocolate is fully melted and remove from the heat. Let the chocolate cool slightly so it's not too hot for your fingers as you dip the dates.
  • Dip your tahini stuffed dates in the chocolate and sprinkle with desired toppings. Place them in the fridge to cool until the chocolate is set and enjoy!
