Creamy  Lasagna Soup

Warm up with a bowl of Creamy Lasagna Soup, rich in comforting flavors. This recipe is packed with the nutritional goodness of vegetables. Three whole carrots and two whole zucchini are roasted and blended to create the luxuriously creamy soup base.

Simple Ingredients

– carrots – zucchini – extra lean ground beef – onion – garlic – tomato paste – beef bouillon cubes – diced tomatoes – Italian seasoning – balsamic vinegar – salt and pepper – mini lasagna noodles

Step 1: Roast the carrots and zucchini.  Step 2: Brown the ground beef and drain the fat. 

Step 3: Add the diced onion and cook to soften. Then add garlic and chopped zucchini and cook for a minute or two.  Step 4: Stir in tomato paste and cook for a few more minutes. 

Step 5: Add broth, diced tomatoes, Italian seasoning, salt & pepper and balsamic vinegar and bring the soup to a simmer.  Step 6: Add noodles to soup and cook to al dente. 

Step 7: Blend roasted veggies in 3 cups of water and add to the soup.  Step 8: Taste soup and adjust seasoning, garnish and serve!
