Ingredients

  • 1 cup Medjool dates
  • 1 cup raw walnuts
  • 2 tbsp baking molasses
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp clove
  • pinch of sea salt
  • ½ tsp pure vanilla extract

For Rolling the Truffles

  • 1 tablespoon unsweetened cocoa powder
  • ¼ cup finely chopped/crushed walnuts

Instructions

  • Add the dates, walnuts, molasses, cinnamon, ginger, clove, salt, and vanilla to a food processor.
  • Process in 30-second intervals for about 1–2 minutes, until the mixture is smooth and the walnuts are finely blended.
  • Roll the mixture into small, bite-sized balls. (For uniform size, weigh each ball to about 25 grams.) This recipe makes 12 truffles.
  • Roll half of the truffles in finely chopped walnuts and half of the truffles in cocoa powder.
  • Chill the truffles in the fridge for at least 1 hour, then enjoy!

Notes

  • To make sure all truffles are the same size, use a kitchen scale to portion the mixture. Weight each ball at 25 grams before rolling.
  • Experiment with different coatings beyond cocoa powder and crushed walnuts. Consider using shredded coconut, crushed pistachios, crushed gingerbread cookies, sesame seeds, or even a dusting of powdered sugar.
  • For an extra festive touch, consider dipping the truffles in melted baker's chocolate.
  • Store your gingerbread truffles in an airtight container in the refrigerator for up to 5 days.
  • Enjoy chilled!
