    These Holiday Date and Walnut Gingerbread Truffles are easy to make, no-bake, and loaded with naturally sweet dates and holiday spices. They're perfect for gluten-free and dairy-free friends or anyone who loves festive flavors! They're great as a gift, snack, or dessert.

    Ingredients

    The nine ingredients to make Date and Walnut Gingerbread Truffles in pinch bowls and small bowls around a large pottered bowl of dates and walnuts.
    • Dates- You could use other types of dates, but stick with softer varieties like Deglet Noor if Medjool aren’t available.
    • Walnuts- toasting the walnuts beforehand would add a delicious flavour if desired.
    • Molasses - use baking or fancy or "unsulphured" molasses.

    How To Make Date and Walnut Gingerbread Truffles

    Here are the step-by-step instructions to make this recipe.

    Step 1: Add ingredients to the food processor.

    Add the dates, walnuts, molasses, cinnamon, ginger, clove, salt, and vanilla to a food processor.

    Step 2: Process the mixture until smooth.

    Process in 30-second intervals for about 1–2 minutes, until the mixture is smooth and the walnuts are finely blended.

    Step 3: Roll the balls.

    Roll the mixture into small, bite-sized balls. (For uniform size, weigh each ball to about 25 grams.) This recipe makes 12 truffles.

    Step 4: Roll the truffles in either crushed walnuts or cocoa powder.

    Roll half of the truffles in finely chopped walnuts and half of the truffles in cocoa powder.

    Step 5: Chill the truffles.

    Chill the truffles in the fridge for at least 1 hour, then enjoy!

    Expert Tips

    • To make sure all truffles are the same size, use a kitchen scale to portion the mixture. Weight each ball at 25 grams before rolling.
    • Experiment with different coatings beyond cocoa powder and crushed walnuts. Try using shredded coconut, crushed pistachios, crushed gingerbread cookies, sesame seeds, or even a dusting of powdered sugar.
    • For an extra festive touch, consider dipping the truffles in melted baker's chocolate.
    • Store your gingerbread truffles in an airtight container in the refrigerator for up to 5 days.

    Ingredients
      

    • 1 cup Medjool dates
    • 1 cup raw walnuts
    • 2 tbsp baking molasses
    • ½ tsp ground cinnamon
    • ½ tsp ground ginger
    • ¼ tsp clove
    • pinch of sea salt
    • ½ tsp pure vanilla extract

    For Rolling the Truffles

    • 1 tablespoon unsweetened cocoa powder
    • ¼ cup finely chopped/crushed walnuts
