My recipe for Date Cookies creates a delicious and nutritious cookie filled with oats, nuts and dried fruit. These cookies are similar to an oatmeal raisin cookie but use dates instead. Dates add natural sweetness to baking and also contain significant amounts of vitamins and minerals including potassium, copper, manganese and magnesium. In addition, dates are high in fibre and even add some protein.

My three boys devoured these chewy, hearty cookies and I felt good about what they were eating. You could also add a tablespoon or two of Brewer's yeast to add even more nutrition, making these the perfect lactation cookie.

If the dough is a bit soft, I suggest chilling it before rolling the cookies into balls. This sometimes happens if your butter is very soft. I also found it easier to snip the dates into small pieces with scissors rather than cutting them with a knife. Sprinkling a few snipped dates on top of the cookies before baking is a nice touch.

Are dates good for you?

Dates are a natural sweetener and can often replace refined sugar in a recipe. They are high in fibre and antioxidants and contain a small amount of protein. 100 g of dates contain 7 grams of fibre and 2 grams of protein. They also contain significant amounts of potassium, copper, manganese and magnesium along with a small amount of iron.

Recipe Steps

Cream together the room-temperature butter and sugar until well combined.

Add the room-temperature eggs one at a time, beating after each addition.

Add the molasses and vanilla, combining well.

In a separate bowl, whisk together the dry ingredients including the rolled oats.

Slowly add the dry ingredients to the wet ingredients until incorporated.

Add the dates and pecans and beat just until combined.

Preheat your oven to 350 degrees F.

If your dough seems soft, chill for 30 minutes before rolling your cookies.

Roll about 3 tablespoon of dough for each cookie. Makes about 26 cookies.

Add a few snips of dates to the top of each cookie for appearance if desired.

Bake for 12 to 15 minutes. Enjoy!
