My recipe for Date Cookies creates a delicious and nutritious cookie filled with oats, nuts and dried fruit. These cookies are similar to an oatmeal raisin cookie but use dates instead.

Simple Ingredients

– butter – coconut sugar or  brown sugar – molasses – eggs – vanilla extract – all-purpose flour – baking soda – salt – ground cinnamon – rolled oats – dates – pecans

How To Make Date Cookies  1. Cream together the butter and sugar. 2. Add the eggs one at a time, beating after each addition. 3. Add the molasses and vanilla, combining well.

4.In a separate bowl, whisk together the dry ingredients. 5. Slowly add the dry ingredients to the wet ingredients until incorporated. 6. Add the dates and pecans and beat just until combined.

7. If your dough seems soft, chill for 30 minutes. 8. Roll about 3 tbsp of dough for each cookie. 9. Add a few snips of dates to the top of each cookie for appearance if desired. 10. Bake for 12 to 15 minutes in a 350 degree oven. Enjoy!
