    Ingredients
      

    • 1 cup whole milk
    • 1 cup cottage cheese
    • 1 ½ cups wild blueberries
    • 3 tbsp raw honey
    • 1 tsp pure vanilla extract
    • 1 tbsp lemon juice
    • pinch of salt
    • ⅛ tsp xanthan gum (optional but this ingredient makes the popsicles less icy)

    Instructions
     

    • Add all ingredients to a blender and blend well. If needed, pause halfway through to scrape down the sides of the blender for a smooth and even consistency.
    • Pour the blended mixture into popsicle molds.
    • Place the molds in the freezer and freeze for at least 6 hours or overnight until fully solid.
    • Remove the popsicles from the freezer and let them sit at room temperature for about 5 minutes before enjoying.

      This sounds very interesting. I'm wondering if I could sub Greek yogurt for the whole milk to up the protein content? Would the yogurt work?

        You could try 1/2 cup yogurt and 1/2 cup milk. For my blender I would need at least some liquid to get it to blend thoroughly. Let me know how it goes!
